One Pan, Zero Sink Full of Dishes: 5 Sheet Pan Dinners

The promise: Five complete dinners roasted on a single sheet pan - protein, veg and sauce together
Five complete dinners, each roasted on a single sheet pan — protein, vegetables and sauce together, one pan to wash. The kit: a pair of heavy-duty half sheet pans so you can run two pans at once or always have a clean one ready, pre-cut parchment sheets so nothing sticks and cleanup is just tossing the paper, a refillable oil sprayer for an even coat without aerosol, a sheet pan suppers cookbook for the formulas, and a four-bottle seasoning set so every pan tastes different. The 5 dinners: 1) Lemon-herb chicken thighs with potatoes and green beans, 2) Sausage, peppers and onions with mustard sauce, 3) Salmon with asparagus and cherry tomatoes, 4) Fajita chicken with peppers, onions and lime, 5) Gnocchi with sausage, broccoli and parmesan.
How this post keeps its promise
The formula for every dinner below is the same: line the pan with parchment, mist with oil, spread everything in one layer with space between pieces, roast at 425°F, and serve straight from the pan. One pan, one sheet of parchment, one wash.
- Dinner 1 — Lemon-herb chicken thighs + potatoes + green beans (40 min): bone-in thighs, halved baby potatoes and green beans on the pan; oil, salt, pepper, lemon slices. Roast 35–40 min until thighs hit 165°F and potatoes are crisp. Sauce: pan juices squeezed with the roasted lemon.
- Dinner 2 — Sausage + peppers + onions with mustard sauce (30 min): sliced sausage, pepper strips and onion wedges, oil and Cajun seasoning. Roast 25–30 min. Sauce: mustard whisked with a spoon of pan drippings.
- Dinner 3 — Salmon + asparagus + cherry tomatoes (20 min): salmon fillets, asparagus and halved tomatoes; oil and the Sea-soning blend. Roast 12–15 min until the salmon flakes. Sauce: the burst tomatoes mashed with their juices.
- Dinner 4 — Fajita chicken + peppers + onions + lime (30 min): sliced chicken, peppers and onions with the Original blend. Roast 25 min, then squeeze lime over the pan and serve in tortillas.
- Dinner 5 — Gnocchi + sausage + broccoli + parmesan (25 min): shelf-stable gnocchi straight from the package (no boiling), sausage coins and broccoli florets, oil and Preem-o. Roast 20–25 min until the gnocchi crisps, shower with parmesan.
Every dinner uses the same pan, the same parchment, the same sprayer — the only thing that changes is what goes on the pan.
