A Bar Cart for Cocktails AND Mocktails (Everyone Included)

The promise: A bar cart setup with parallel cocktail and mocktail builds - tools, mixers, garnishes, signage

A bar cart where the mocktails are not an afterthought. The setup starts with a rolling two-tier cart, a 24-ounce shaker set with jigger and strainer, six coupe glasses for the cocktails, a craft margarita syrup that works for both alcoholic and zero-proof builds, and a small drink dispenser for a batch mocktail guests can pour themselves. The parallel menu: 1) a classic margarita and a virgin margarita from the same syrup, 2) a mojito and a nojito with muddled mint and lime, 3) a batch citrus-mint cooler in the dispenser, 4) coupe service for cocktails and sturdy tumblers for mocktails, 5) one clearly labeled card per drink so nobody has to ask what is in their glass. Set it up once and the cart runs itself all night, with the dispenser doing the work while you actually enjoy the party.

How this post keeps its promise

Set the cart up in zones (10 minutes): top shelf = cocktail tools, shaker set and coupes. Bottom shelf = the dispenser, tumblers and the syrup bottles. A small bowl of lime wheels, a bunch of mint sprigs and a dish of orange slices sit between the zones as the shared garnish station — both sides garnish from the same bowls.

Build 1 — Margarita and virgin margarita (3 minutes each): shake 2 oz tequila, 1 oz Portland Syrups margarita syrup and 1 oz fresh lime juice with ice; strain into a coupe, salt rim optional. The virgin version: shake 2 oz syrup and 1 oz lime juice with ice, pour into a tumbler over fresh ice, top with a splash of sparkling water, same lime-wheel garnish. Same syrup, same garnish, same care.

Build 2 — Mojito and nojito (4 minutes each): muddle a handful of mint leaves with half a lime, cut into wedges, and a spoon of sugar in a tumbler. For the mojito, add 2 oz white rum, ice and club soda; for the nojito, skip the rum and add extra club soda. Stir, slap a mint sprig between your palms for aroma, and drop it in.

Build 3 — Batch citrus-mint cooler (5 minutes, serves the whole party): in the dispenser, combine the juice of 6 limes, a sliced orange, a big handful of torn mint, and water to just under the spigot line; chill, then top with sparkling water right before guests arrive. Guests pour their own — no bartender bottleneck, no one standing empty-handed.

Signage that does the including for you: one card per drink, propped in front of each build — "MARGARITA (contains alcohol)", "VIRGIN MARGARITA (zero proof)", "MOJITO (contains alcohol)", "NOJITO (zero proof)", "CITRUS-MINT COOLER (zero proof, help yourself)". When every drink is labeled, nobody has to ask, guess, or explain why they are drinking what they are drinking — and that is the whole point of the cart.
